Description

Garlic Balsamic Steak Bites are savory and sweet bites of steak marinated in garlic and balsamic vinegar, seared to perfection and served with roasted potatoes and green beans.


Ingredients

  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil (plus more for veggies)
  • 2 tbsp soy sauce
  • 4 tbsp balsamic vinegar (2 tbsp for marinade + 2 tbsp for glaze)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1.5 lb baby gold potatoes (quartered)
  • ½ tbsp garlic powder for potatoes
  • ½ tsp paprika
  • 12 oz fresh green beans (trimmed)

Instructions

  1. Marinate the Steak: In a bowl, combine olive oil, soy sauce, balsamic vinegar, salt, pepper, garlic powder, crushed red pepper, and minced garlic. Add the cubed steak and mix well. Let it marinate for at least 30 minutes.
  2. Prepare the Veggies: Preheat your oven to 425°F (220°C). In a large bowl, toss the quartered baby gold potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread them on a baking sheet.
  3. Roast the Potatoes: Roast the potatoes for about 25-30 minutes or until golden brown and crispy, flipping halfway.
  4. Sear the Steak Bites: While the potatoes roast, heat a skillet over medium-high heat. Sear the marinated steak bites for about 3-4 minutes, or until they achieve a nice brown crust.
  5. Make the Glaze: In a small saucepan, combine the remaining balsamic vinegar, beef broth, honey, and soy sauce. Simmer until slightly thickened.
  6. Prepare the Green Beans: In the last 10 minutes of roasting the potatoes, add the trimmed green beans on another baking sheet and drizzle with olive oil, salt, pepper, and garlic powder. Roast until tender.
  7. Assemble the Bowls: Serve the seared steak bites over roasted potatoes and green beans, drizzling with the glaze. Enjoy!

Notes

To enhance flavors, marinate the steak overnight. Avoid overcrowding the pan when searing the steak for the best crust.
