  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Prep the ingredients: Cut the beef into bite-sized pieces and halve the baby potatoes. Optional: Parboil the potatoes briefly to soften them slightly.
  2. Sear the beef: Heat olive oil in a skillet over medium-high heat. Add the beef bites and sear them until they are browned on all sides.
  3. Make the garlic butter sauce: In a small bowl, combine the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
  4. Combine in the slow cooker: Transfer the halved baby potatoes and seared beef to the slow cooker. Pour the garlic butter sauce over the top, followed by the beef broth.
  5. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
  6. Rest before serving: Once done, let the dish rest for about 10 minutes before serving to let the flavors meld.

Notes

For lower carbs, swap potatoes for carrots or parsnips. Store leftovers in the fridge for up to 3 days or freeze for 3 months.
