Ingredients

  • 2 cups baby potatoes, halved
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika

Instructions

  1. In a slow cooker, place the beef stew meat and the halved potatoes.
  2. In a small saucepan, melt the butter over medium heat. Add minced garlic, thyme, smoked paprika, salt, and pepper, stirring until fragrant, about 1 minute.
  3. Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
