- 2 cups baby potatoes, halved
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
Instructions
- In a slow cooker, place the beef stew meat and the halved potatoes.
- In a small saucepan, melt the butter over medium heat. Add minced garlic, thyme, smoked paprika, salt, and pepper, stirring until fragrant, about 1 minute.
- Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
- Stir to combine, then cover and cook on low for 6-8 hours or until beef is tender.
- Once cooked, sprinkle with fresh parsley before serving. Enjoy your hearty meal!
