Ingredients

- 2 lbs beef sirloin, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1 cup beef broth
- Chopped parsley for garnish
Instructions
- In a slow cooker, add the beef cubes, halved potatoes, salt, pepper, and thyme (if using).
- In a small saucepan, melt the unsalted butter. Sauté the minced garlic in the melted butter until fragrant but not browned.
- Pour the garlic butter over the beef and potatoes in the slow cooker.
- Pour in the beef broth, gently mixing to combine all the ingredients.
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the beef is tender.
- Serve hot, garnished with freshly chopped parsley.
Notes
For a deeper flavor, brown the beef before adding it to the slow cooker. Consider adding other vegetables or spices to customize the dish.
