  • 1 lb baby potatoes, halved
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced

  • 1 teaspoon dried thyme (optional)
  • 1 cup beef broth
  • Chopped parsley for garnish

Instructions

  1. In a slow cooker, add the beef cubes, halved potatoes, salt, pepper, and thyme (if using).
  2. In a small saucepan, melt the unsalted butter. Sauté the minced garlic in the melted butter until fragrant but not browned.
  3. Pour the garlic butter over the beef and potatoes in the slow cooker.
  4. Pour in the beef broth, gently mixing to combine all the ingredients.
  5. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the beef is tender.
  6. Serve hot, garnished with freshly chopped parsley.
