  • 1 pound Baby potatoes, halved
  • 4 tablespoons Unsalted butter, melted
  • 3 cloves Garlic, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt, or to taste
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Gather all ingredients and prepare the beef and potatoes.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the beef bites and sear until browned on all sides. Set aside.
  4. In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to create the garlic butter sauce.
  5. In the slow cooker, place the halved baby potatoes and the seared beef.
  6. Pour the garlic butter sauce over the top and add the beef broth.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  8. Let the dish rest for about 10 minutes before serving.

Notes

For a smoother texture, consider parboiling the baby potatoes for a few minutes before adding them to the slow cooker. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
