Description

Ingredients

  • 400g spaghetti
  • 250g Italian sausage
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned. Remove the sausage from the skillet and set aside.
  3. In the same skillet, add butter and minced garlic. Cook for about 1 minute, or until fragrant.
  4. Toss in the fresh spinach and sauté until wilted.
  5. Return the cooked sausage to the skillet, followed by the drained spaghetti. Toss everything well to coat the noodles in the garlic butter.
  6. Sprinkle mozzarella and Parmesan cheese over the top. Cover the skillet with a lid and let it sit for 2-3 minutes until the cheese melts.
  7. Season with salt and black pepper to taste. Toss gently one last time, and serve hot.

Notes

Garnish with extra Parmesan or red pepper flakes for added flavor. Pair with a crisp green salad or garlic bread.
