A delightful blend of garlic butter spaghetti with cheesy Italian sausage and fresh spinach, perfect for quick weeknight meals.

- 400g spaghetti
- 250g Italian sausage
- 3 cups fresh spinach
- 4 cloves garlic, minced
- 4 tablespoons butter
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned. Remove the sausage from the skillet and set aside.
- In the same skillet, add butter and minced garlic. Cook for about 1 minute, or until fragrant.
- Toss in the fresh spinach and sauté until wilted.
- Return the cooked sausage to the skillet, followed by the drained spaghetti. Toss everything well to coat the noodles in the garlic butter.
- Sprinkle mozzarella and Parmesan cheese over the top. Cover the skillet with a lid and let it sit for 2-3 minutes until the cheese melts.
- Season with salt and black pepper to taste. Toss gently one last time, and serve hot.
Notes
Garnish with extra Parmesan or red pepper flakes for added flavor. Pair with a crisp green salad or garlic bread.
