Description

Ingredients

  • 400g spaghetti
  • 250g Italian sausage
  • 3 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, crumbling it as it cooks, and sauté until browned. Remove the sausage from the skillet and set it aside.
  3. In the same skillet, add the butter and minced garlic. Cook for about 1 minute until fragrant.
  4. Toss in the spinach and sauté until it wilts, which should take just a couple of minutes.
  5. Return the cooked sausage to the skillet, then add the drained spaghetti. Toss everything together to ensure the noodles are well-coated in the garlic butter.
  6. Sprinkle mozzarella and Parmesan cheese on top. Cover the skillet with a lid and let the cheese melt for 2-3 minutes.
  7. Season with salt and pepper to taste, toss again gently, and serve hot.

Notes

For a lighter version, swap the sausage for turkey or chicken sausage. Serve with crusty garlic bread or a simple green salad.
