Ingredients

- 1 lb steak (sirloin, ribeye, or New York strip)
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and season them with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Once hot, add steak bites in a single layer. Sear for 1-2 minutes on each side until beautifully browned. Remove steak from the skillet and set aside.
- Melt butter in the same skillet. As it sizzles, add minced garlic and cook for about 30 seconds until fragrant.
- Add zucchini to the skillet. Sauté for 3-5 minutes, stirring occasionally, until tender but still crisp.
- Return the seared steak bites to the skillet, tossing everything together to coat in the garlic butter.
- Cook for an additional 1-2 minutes until the steak is heated through.
- Garnish with fresh parsley if desired and serve immediately.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 3 months.
