Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip)
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season them with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Once hot, add steak bites in a single layer. Sear for 1-2 minutes on each side until beautifully browned. Remove steak from the skillet and set aside.
  4. Melt butter in the same skillet. As it sizzles, add minced garlic and cook for about 30 seconds until fragrant.
  5. Add zucchini to the skillet. Sauté for 3-5 minutes, stirring occasionally, until tender but still crisp.
  6. Return the seared steak bites to the skillet, tossing everything together to coat in the garlic butter.
  7. Cook for an additional 1-2 minutes until the steak is heated through.
  8. Garnish with fresh parsley if desired and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 3 months.
