Ingredients

  • 1 lb (450g) sirloin or ribeye steak, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, finely minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Begin by patting the steak cubes dry with paper towels. Generously season them with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the steak cubes in batches, searing them for 2–3 minutes on each side until they develop a lovely brown crust. Remove from the pan and set aside.
  3. Lower the heat to medium. Melt the butter in the same skillet, then add minced garlic. Sauté until fragrant, about 30 seconds. Return the steak to the skillet and toss to coat.
  4. In a separate saucepan, melt another tablespoon of butter. Sauté the finely minced garlic for 30 seconds, then add the heavy cream, bringing it to a gentle simmer. Stir in the freshly grated Parmesan cheese until creamy and smooth.
  5. Pour the sauce over the steak bites, or serve it on the side for dipping. Garnish with fresh parsley.

Notes

Keep the steak at room temperature for 30 minutes before cooking for even results. Don’t overcrowd the skillet while searing.
