Ingredients

  • 4 ribeye steaks (1-inch thick, approx. 8 oz each)
  • Salt, to taste
  • Pepper, to taste
  • 4 tablespoons butter
  • 4 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Season the ribeye steaks generously with salt and pepper on both sides.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of butter.
  3. Add the steaks once the butter is melted and bubbling. Cook for about 4-5 minutes on one side.
  4. Flip the steaks using tongs, add the remaining butter and minced garlic into the skillet, then cook for an additional 4-5 minutes for medium-rare.
  5. Remove the steaks from the skillet and let them rest for about 5 minutes.
  6. Reduce the heat to medium in the same skillet and add the heavy cream, whisking continuously to deglaze and incorporate the browned bits.
  7. Stir in the grated Parmesan cheese and whisk until thickened, about 3-4 minutes. Adjust with salt and pepper as needed.
  8. Slice the rested steaks, plate them, and drizzle the creamy Parmesan sauce over the top. Finish with a sprinkle of chopped parsley for garnish.

Notes

For the best results, use a meat thermometer to check for doneness. Aim for about 130°F for medium-rare.
