Description

Simple and flavorful homemade garlic herb bread baked in a Dutch oven, perfect for any meal or gathering.


Ingredients

  • 3 cups all-purpose flour (plus extra for dusting)
  • 2 teaspoons fine sea salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups lukewarm water (90-100°F)
  • 4 cloves garlic, minced finely
  • 2 tablespoons fresh herbs (rosemary, thyme, or a combination), chopped finely
  • 1 tablespoon olive oil (for coating)

Instructions

  1. In a large mixing bowl, whisk together the flour, salt, and instant yeast.
  2. Stir in the minced garlic and chopped herbs until evenly distributed.
  3. Pour in the lukewarm water and stir with a wooden spoon until no dry flour remains. The dough will be sticky and rough.
  4. Cover the bowl tightly with plastic wrap or a damp towel and let it rise at room temperature for 12 to 18 hours until doubled and bubbly.
  5. Generously flour a work surface and your hands. Gently scrape the dough onto the surface and fold the edges toward the center to shape it into a round form.
  6. Transfer the shaped dough onto oiled parchment paper and cover loosely with a towel. Let it rest for 45 minutes to an hour.
  7. Preheat your oven to 450°F with a Dutch oven (with lid) inside for 30 minutes.
  8. Carefully remove the hot Dutch oven. Using the parchment paper as a sling, lower the dough into the pot and score the top with a sharp knife.
  9. Cover with the lid and bake for 30 minutes. Remove the lid and bake for an additional 15 to 20 minutes until deep golden brown.
  10. Remove the bread from the Dutch oven and let it cool on a wire rack for at least 30 minutes before slicing.

Notes

Store bread in a paper bag at room temperature for a couple of days, or in plastic wrap in the freezer for up to three months.
