Simple and flavorful homemade garlic herb bread baked in a Dutch oven, perfect for any meal or gathering.
Ingredients

- 3 cups all-purpose flour (plus extra for dusting)
- 2 teaspoons fine sea salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups lukewarm water (90-100°F)
- 4 cloves garlic, minced finely
- 2 tablespoons fresh herbs (rosemary, thyme, or a combination), chopped finely
- 1 tablespoon olive oil (for coating)
Instructions
- In a large mixing bowl, whisk together the flour, salt, and instant yeast.
- Stir in the minced garlic and chopped herbs until evenly distributed.
- Pour in the lukewarm water and stir with a wooden spoon until no dry flour remains. The dough will be sticky and rough.
- Cover the bowl tightly with plastic wrap or a damp towel and let it rise at room temperature for 12 to 18 hours until doubled and bubbly.
- Generously flour a work surface and your hands. Gently scrape the dough onto the surface and fold the edges toward the center to shape it into a round form.
- Transfer the shaped dough onto oiled parchment paper and cover loosely with a towel. Let it rest for 45 minutes to an hour.
- Preheat your oven to 450°F with a Dutch oven (with lid) inside for 30 minutes.
- Carefully remove the hot Dutch oven. Using the parchment paper as a sling, lower the dough into the pot and score the top with a sharp knife.
- Cover with the lid and bake for 30 minutes. Remove the lid and bake for an additional 15 to 20 minutes until deep golden brown.
- Remove the bread from the Dutch oven and let it cool on a wire rack for at least 30 minutes before slicing.
Notes
Store bread in a paper bag at room temperature for a couple of days, or in plastic wrap in the freezer for up to three months.
