Description

A delightful one-pan dinner combining tender chicken with golden potatoes, infused with garlic and cheese.


Ingredients

  • 4 boneless skinless chicken breasts or thighs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 1 tablespoon olive oil (plus 3 tablespoons for potatoes)
  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, season the chicken with Italian seasoning, smoked paprika, 1 tablespoon olive oil, salt, and pepper. Mix well to coat evenly.
  3. In another bowl, toss the halved potatoes with the remaining 3 tablespoons of olive oil, minced garlic, salt, and pepper until they’re fully coated.
  4. Arrange the seasoned chicken in an oven-safe skillet or baking sheet and surround it with the potato mixture.
  5. Sprinkle the grated Parmesan cheese over both the chicken and potatoes.
  6. Bake for about 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.

Notes

Garnish with fresh parsley. Pairs well with a side salad or roasted vegetables.
