- 4 boneless skinless chicken breasts or thighs
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- 1 tablespoon olive oil (plus 3 tablespoons for potatoes)
- 1.5 pounds baby Yukon Gold or red potatoes, halved
- 4 cloves garlic, minced
- ⅓ cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, season the chicken with Italian seasoning, smoked paprika, 1 tablespoon olive oil, salt, and pepper. Mix well to coat evenly.
- In another bowl, toss the halved potatoes with the remaining 3 tablespoons of olive oil, minced garlic, salt, and pepper until they’re fully coated.
- Arrange the seasoned chicken in an oven-safe skillet or baking sheet and surround it with the potato mixture.
- Sprinkle the grated Parmesan cheese over both the chicken and potatoes.
- Bake for about 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
Notes
Garnish with fresh parsley. Pairs well with a side salad or roasted vegetables.
