- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- ½ cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Wash and halve the baby potatoes.
- Rub chicken breasts with olive oil, Italian seasoning, salt, black pepper, and optional red pepper flakes.
- Place halved potatoes in the bottom of the crockpot, then lay the seasoned chicken breasts on top.
- Pour chicken broth over everything.
- Sprinkle minced garlic and grated parmesan cheese over the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Carefully remove everything from the crockpot and drizzle with leftover sauce before serving.
Notes
For richer flavor, substitute chicken with thighs. Use vegetable broth and replace chicken with tofu or tempeh for a vegetarian option.
