- 1 lb ground chicken
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 2 large eggs
- 1 medium onion, diced
- 2 tbsp soy sauce (low-sodium recommended)
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
- In a skillet over medium heat, sauté the diced onions for about 5 minutes, until they become soft.
- In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, and black pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in the greased baking dish.
- Sprinkle the remaining Parmesan cheese on top. For an added kick, consider dusting with paprika or Italian seasoning.
- Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
- Allow the meatloaf to rest for 10 minutes before slicing and serving.
