Description

A comforting and flavorful twist on traditional meatloaf, packed with protein and savory garlic and Parmesan cheese.


Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté the diced onions until soft, about 5 minutes.
  3. In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese. Mix until just combined.
  4. Shape the mixture into a loaf and place it in the greased baking dish.
  5. Sprinkle the remaining Parmesan cheese on top. Optionally, add a dash of paprika or Italian seasoning for extra flavor.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before slicing.

Notes

Make sure not to overmix the meat mixture for a juicier meatloaf. Letting it sit a few minutes after baking aids in easier slicing.
