- 4 chicken thighs
- 4 medium potatoes, diced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1 tablespoon dried parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, minced garlic, salt, black pepper, garlic powder, onion powder, and dried parsley.
- Add the chicken thighs and diced potatoes to the bowl and toss until everything is evenly coated.
- Place the chicken thighs skin side up on a baking sheet. Arrange the potatoes around them.
- Sprinkle the grated Parmesan cheese over both the chicken and potatoes.
- Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.

Notes
For enhanced flavor, marinate chicken in the seasoning for 30 minutes to 1 hour. Broil for a couple of minutes at the end for extra crunch.
