Ingredients

  • 4 chicken thighs
  • 4 medium potatoes, diced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, salt, black pepper, garlic powder, onion powder, and dried parsley.
  3. Add the chicken thighs and diced potatoes to the bowl and toss until everything is evenly coated.
  4. Place the chicken thighs skin side up on a baking sheet. Arrange the potatoes around them.
  5. Sprinkle the grated Parmesan cheese over both the chicken and potatoes.
  6. Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.

Notes
