Description

A comforting and easy-to-make meal featuring tender chicken and creamy, garlicky potatoes cooked in a crockpot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and halve the baby potatoes. Set them aside.
  2. In a bowl, rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and optional red pepper flakes.
  3. Place the halved potatoes at the bottom of the crockpot, then lay the seasoned chicken breasts on top.
  4. Pour the chicken broth over the chicken and potatoes.
  5. Sprinkle minced garlic evenly over the chicken, then add the parmesan cheese.
  6. Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender.
  7. Carefully remove the chicken and potatoes, drizzle with sauce, and garnish with fresh parsley before serving.

Notes

Consider marinating the chicken in olive oil and seasonings for deeper flavor. You can also toss in other vegetables like carrots or bell peppers.
