Description

  • 2¼ teaspoons (1 packet) instant yeast
  • 1½ teaspoons salt
  • 1½ cups warm water (about 110°F)
  • 1 tablespoon sugar
  • ¼ cup extra virgin olive oil, plus more for greasing
  • 34 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs or chopped rosemary (optional)
  • Flaky sea salt, for topping

Instructions

  1. In a mixing bowl, stir together warm water, sugar, and instant yeast. Let it sit for about 5 minutes until the mixture becomes foamy.
  2. Add the flour and salt. Mix together until a sticky dough forms, then knead the dough.
  3. Coat the dough with a bit of olive oil, cover the bowl with a clean cloth, and let it rise in a warm area for about 1 hour or until it has doubled in size.
  4. Grease a 9×13-inch pan. Heat 2 tablespoons of olive oil in a small pan over medium heat. Add minced garlic, cooking until fragrant, about 1 minute.
  5. Transfer the dough to the greased pan, gently pressing it into the corners. If it resists, let it rest for about 10 minutes before stretching it fully. Cover and let it rise for another 30–45 minutes.
  6. Preheat your oven to 425°F (220°C). Dimple the risen dough with your fingers, brush generously with garlic oil, and sprinkle with Parmesan, herbs, and flaky sea salt. Bake for 20-25 minutes, or until golden brown.
  7. Allow the focaccia to cool in the pan for 5-10 minutes before moving it to a wire rack to cool completely. Slice and serve warm.
