Description

A creamy and flavorful chili that blends chicken, beans, and spices, perfect for chilly nights or festive gatherings.


Ingredients

  • pounds boneless, skinless chicken breasts or thighs
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced (optional)
  • 1 can (4 ounces) diced green chiles
  • 2 cans (15 ounces each) cannellini or great northern beans, drained and rinsed
  • 1 cup frozen or canned sweet corn, drained
  • 4 cups low-sodium chicken broth
  • ½ cup sour cream
  • ½ cup shredded Monterey Jack or pepper jack cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon ground white pepper
  • ¼ teaspoon cayenne pepper (optional)
  • Fresh cilantro, chopped, for garnish
  • Additional sour cream and cheese, for serving

Instructions

  1. Pat the chicken dry and season both sides with salt and pepper.
  2. In a large pot or Dutch oven, heat 1 tablespoon of oil over medium heat. Sear the chicken for 2–3 minutes on each side until lightly golden, then transfer to a plate.
  3. In the same pot, add the diced onion and sauté for 3–4 minutes until translucent. Add garlic and jalapeño, cooking for another minute until fragrant.
  4. Stir in the green chiles, cumin, oregano, coriander, smoked paprika, white pepper, and cayenne. Sauté the spices for about a minute.
  5. Return the chicken to the pot and add the beans, corn, and chicken broth. Bring to a gentle simmer, cover, and cook for 15–20 minutes until the chicken is cooked through and tender.
  6. Remove the chicken from the pot, shred it using two forks, and return it to the pot.
  7. Stir in the sour cream and shredded cheese until fully melted, making the chili luscious and creamy. Adjust seasoning to taste.
  8. Ladle into bowls while hot and top with chopped cilantro and additional sour cream or cheese as desired.

Notes

For a milder version, skip the jalapeño. This chili pairs well with crusty bread or cornbread.
