A delightful twist on traditional gingerbread, this Gingerbread Crazy Cake is simple to make and perfect for holiday gatherings.
Ingredients

- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon + 1/8 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 ½ teaspoons ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- ¼ cup canola oil (or vegetable oil)
- 1 teaspoon pure vanilla extract
- 1 tablespoon apple cider vinegar (or white vinegar)
- ¼ cup molasses (unsulphured)
- 1 cup water
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper.
- In a large mixing bowl, whisk together the sugar, oil, vanilla extract, apple cider vinegar, molasses, and water until well combined.
- In a separate bowl, mix the flour, baking powder, baking soda, spices, and salt.
- Make three small wells in the dry ingredients. Pour the oil/vinegar mixture into one well, the molasses mixture into another, and the water into the last well.
- Use a spatula to gently fold the ingredients together until just combined; a few lumps are okay!
- Pour the batter into your prepared baking dish and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Dust with powdered sugar or top with whipped cream before serving. Pairs well with coffee or tea.
