Description

  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour (set some aside for topping)

  • 1/4 tsp salt
  • 2 tbsp salted butter, melted (for filling)
  • 1 tbsp oat flour (for filling)
  • 2 tbsp white sugar (for filling)
  • 1/2 tbsp cinnamon (for filling)
  • 1/4 cup salted butter, slightly softened (for crumble topping)
  • 1/4 cup light brown sugar (for crumble topping)
  • 1/4 cup almond flour (for crumble topping)
  • 1/2 cup oat flour (for crumble topping)
  • 2 tsp cinnamon (for crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, applesauce, eggs, white sugar, and vanilla extract. Beat until well mixed.
  3. Gradually add in the almond flour, oat flour, baking powder, and salt, mixing until smooth.
  4. For the cinnamon filling, mix the melted butter, oat flour, white sugar, and cinnamon in a separate bowl.
  5. Prepare the crumble topping by mixing room temperature butter, brown sugar, almond flour, oat flour, and cinnamon until crumbly.
  6. Grease or line an 8×8 baking dish. Spread half of the cake batter evenly in the dish.
  7. Sprinkle half of the cinnamon filling over the batter and swirl it gently into the mix.
  8. Pour the rest of the cake batter on top and repeat with the remaining filling.
  9. Finally, layer on the crumble topping, gently pressing it in.
  10. Bake for 25 minutes. Remove from the oven, and place the crumble topping on gently before returning to bake for an additional 18 minutes.
  11. Let it cool completely before slicing and serving.

Store the cake in an airtight container at room temperature for up to three days or freeze leftovers for up to a month.
