Description

A comforting and hearty soup that combines pillowy gnocchi with a rich, creamy broth, packed with plant-based ingredients for a satisfying meal.


Ingredients

  • 1 lb gnocchi (substitute gluten-free if needed)
  • 7 oz vegan sour cream
  • 7 oz vegan cream cheese
  • 6 oz vegan chicken cubes
  • 1 tsp Italian herbs
  • 2 Tbsp olive oil
  • 3 cloves garlic, diced
  • 1/3 cup onions, finely chopped
  • 2 ribs celery, chopped
  • 1/4 cup carrots, shredded
  • 1 handful spinach
  • 3 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the olive oil over medium heat. Add the diced celery, garlic, and onions. Sauté them for about 2 minutes until fragrant.
  2. Stir in the vegan chicken cubes and season with salt and pepper. Continue frying for an additional 3 minutes until the chicken begins to brown.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Add the gnocchi to the pot. Cook for about 2-3 minutes until the gnocchi is tender.
  5. Finally, mix in the cream cheese, sour cream, shredded carrots, Italian herbs, and spinach. Cook for 2 minutes more and then serve hot in bowls.

Notes

For extra flavor, add a splash of lemon juice or zest just before serving. Consider garnishing with fresh herbs or olive oil.
