A warm, gooey dip made with roasted garlic, creamy cheeses, and aromatic herbs, perfect for sharing at gatherings.

- 2 heads Garlic (trimmed tops and roasted)
- 2 tablespoons Olive Oil (for roasting garlic)
- 8 ounces Cream Cheese (room temperature)
- 1 cup Sour Cream
- 1 cup Shredded Mozzarella Cheese
- 0.5 cup Grated Parmesan Cheese (divide for mixing and topping)
- Salt, to taste
- Pepper, to taste
- 2 tablespoons Fresh Parsley (chopped for garnish)
- 1 package Crostini or Crackers (for dipping)
Instructions
- Preheat your oven to 400°F (200°C). Drizzle the trimmed garlic heads with olive oil, wrap them in foil, and roast for about 30-35 minutes until soft and caramelized.
- Once cooled, squeeze the roasted garlic cloves into a mixing bowl. Add the cream cheese, sour cream, mozzarella, half of the Parmesan, salt, and pepper. Blend everything until smooth and creamy.
- Spoon the mixture into an oven-safe dish. Sprinkle the remaining Parmesan on top for a cheesy crust.
- Place it in the oven for about 20-25 minutes or until it’s golden and bubbling. Ensure it’s nice and hot throughout!
- Take it out and sprinkle with fresh parsley. Serve immediately with crostini or your cracker of choice.
Notes
This dip can be made a day in advance and stored in the fridge. Reheat before serving. For a twist, add spinach or jalapeños.
