  • 200 g Greek Yogurt (Coconut yogurt works great for dairy-free)
  • 2 tbsp Lemon Juice
  • 2 tbsp Ginger-Garlic Paste
  • 1 tsp Turmeric
  • 1 tsp Garam Masala
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 2 tbsp Oil
  • 50 g Butter/Ghee
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 2 tbsp Tomato Paste
  • 400 g Crushed Tomatoes
  • 150 ml Heavy Cream/Coconut Milk
  • 1 tsp Sugar (Optional; adjust based on taste)
  • 1 bunch Cilantro (For garnishing)

Instructions

  1. Marinate the Chicken: In a bowl, combine the yogurt, lemon juice, ginger-garlic paste, turmeric, garam masala, cumin, coriander, smoked paprika, chili powder, and salt. Add the chicken, ensuring it’s well-coated. Let it marinate for at least 30 minutes (or overnight for deeper flavor).
  2. Sear the Chicken: Heat oil and butter or ghee in a large pan over medium-high heat. Add the marinated chicken in batches, cooking until golden on all sides. Remove and set aside.
  3. Sauté Veggies: In the same pan, add the diced onion, garlic, and ginger. Sauté until golden and fragrant.
  4. Add Tomatoes: Stir in the tomato paste and crushed tomatoes. Cook for about 5 minutes, allowing the flavors to meld.
  5. Creamy Expansion: Pour in the heavy cream or coconut milk and mix well.
  6. Combine and Simmer: Return the chicken to the pan, letting everything simmer for 15-20 minutes until the chicken is thoroughly cooked and the sauce thickens. Taste and adjust sweetness if needed.
  7. Finish and Garnish: Sprinkle with chopped cilantro before serving.

Notes

For best flavor, marinate the chicken overnight if possible. Adjust chili powder based on your spice tolerance.
