- 2 tbsp Lemon Juice
- 2 tbsp Ginger-Garlic Paste
- 1 tsp Turmeric
- 1 tsp Garam Masala
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Smoked Paprika
- 1 tsp Chili Powder
- 1 tsp Salt
- 2 tbsp Oil
- 50 g Butter/Ghee
- 1 large Onion, diced
- 4 cloves Garlic, minced
- 1 inch Ginger, minced
- 2 tbsp Tomato Paste
- 400 g Crushed Tomatoes
- 150 ml Heavy Cream/Coconut Milk
- 1 tsp Sugar (Optional; adjust based on taste)
- 1 bunch Cilantro (For garnishing)
Instructions
- Marinate the Chicken: In a bowl, combine the yogurt, lemon juice, ginger-garlic paste, turmeric, garam masala, cumin, coriander, smoked paprika, chili powder, and salt. Add the chicken, ensuring it’s well-coated. Let it marinate for at least 30 minutes (or overnight for deeper flavor).
- Sear the Chicken: Heat oil and butter or ghee in a large pan over medium-high heat. Add the marinated chicken in batches, cooking until golden on all sides. Remove and set aside.
- Sauté Veggies: In the same pan, add the diced onion, garlic, and ginger. Sauté until golden and fragrant.
- Add Tomatoes: Stir in the tomato paste and crushed tomatoes. Cook for about 5 minutes, allowing the flavors to meld.
- Creamy Expansion: Pour in the heavy cream or coconut milk and mix well.
- Combine and Simmer: Return the chicken to the pan, letting everything simmer for 15-20 minutes until the chicken is thoroughly cooked and the sauce thickens. Taste and adjust sweetness if needed.
- Finish and Garnish: Sprinkle with chopped cilantro before serving.
Notes
For best flavor, marinate the chicken overnight if possible. Adjust chili powder based on your spice tolerance.
