- 200g pitted dates
- 250ml boiling water
- 1 teaspoon baking soda
- 100g unsalted butter
- 150g brown sugar
- 2 large eggs
- 200g self-raising flour
- 1 teaspoon vanilla extract
- 150g brown sugar (for toffee sauce)
- 150ml heavy cream
- 100g unsalted butter (for toffee sauce)
Instructions
- Preheat your oven to 180°C (350°F) and grease a baking dish.
- In a bowl, combine the chopped dates and baking soda. Pour the boiling water over them and let sit for about 10 minutes.
- Cream the unsalted butter and brown sugar together until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Fold in the self-raising flour and the softened date mixture until just combined.
- Pour the batter into your prepared dish and bake for 30-35 minutes, or until a skewer comes out clean.
- While the pudding is baking, combine the brown sugar, heavy cream, and butter in a saucepan over medium heat. Stir until smooth and heated through.
- Once the pudding is done, serve it warm with the toffee sauce drizzled over the top.
Notes
Substitute dates with prunes for a different flavor or dark brown sugar for a richer taste. Sift flour before adding for better mixing.
