Description

A rich and gooey British dessert that delights with its melt-in-your-mouth texture and indulgent toffee sauce.


Ingredients

  • 200g pitted dates
  • 250ml boiling water
  • 1 teaspoon baking soda
  • 100g unsalted butter
  • 150g brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 1 teaspoon vanilla extract
  • 150g brown sugar (for toffee sauce)
  • 150ml heavy cream
  • 100g unsalted butter (for toffee sauce)

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, combine the chopped dates and baking soda. Pour the boiling water over them and let sit for about 10 minutes.
  3. Cream the unsalted butter and brown sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Fold in the self-raising flour and the softened date mixture until just combined.
  6. Pour the batter into your prepared dish and bake for 30-35 minutes, or until a skewer comes out clean.
  7. While the pudding is baking, combine the brown sugar, heavy cream, and butter in a saucepan over medium heat. Stir until smooth and heated through.
  8. Once the pudding is done, serve it warm with the toffee sauce drizzled over the top.

Notes

Substitute dates with prunes for a different flavor or dark brown sugar for a richer taste. Sift flour before adding for better mixing.
