- 2 large sweet potatoes
- 1 cup crumbled feta cheese
- 1/4 cup honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (e.g., thyme or rosemary)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4-inch rounds and lay them out on a baking sheet.
- Drizzle with olive oil, then season generously with salt and pepper. Toss them to ensure an even coating.
- Bake for 25-30 minutes or until they’re tender and slightly crispy.
- Carefully remove from the oven and drizzle honey generously over the roasted rounds.
- Sprinkle the crumbled feta cheese on top of each round.
- Return to the oven and bake for another 5 minutes to warm the feta.
- Once finished, garnish with fresh herbs, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for about 10 minutes for best texture.
