Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4-inch rounds and lay them out on a baking sheet.
  3. Drizzle with olive oil, then season generously with salt and pepper. Toss them to ensure an even coating.
  4. Bake for 25-30 minutes or until they’re tender and slightly crispy.
  5. Carefully remove from the oven and drizzle honey generously over the roasted rounds.
  6. Sprinkle the crumbled feta cheese on top of each round.
  7. Return to the oven and bake for another 5 minutes to warm the feta.
