Ingredients

- 2 cups almond flour
- 1/4 cup coconut flour (optional)
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar or your favorite sweetener
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour and coconut flour. Add a pinch of salt and mix well.
- In another bowl, cream the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, stirring until a soft dough forms.
- Shape the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for about 30 minutes.
- Once chilled, slice into even rounds and place on the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on a wire rack before serving.
Notes
For longer storage, freeze in a freezer-safe bag for up to three months.
