Description

Delicious shortbread cookies made with almond flour, perfect for any occasion and gluten-free.


Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour (optional)
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar or your favorite sweetener
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour and coconut flour. Add a pinch of salt and mix well.
  3. In another bowl, cream the softened butter and powdered sugar until light and fluffy.
  4. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, stirring until a soft dough forms.
  6. Shape the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for about 30 minutes.
  7. Once chilled, slice into even rounds and place on the prepared baking sheet.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on a wire rack before serving.
