- 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla extract and mashed sweet potatoes.
- In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
- Gradually add the dry mixture to the sweet potato mixture, alternating with buttermilk until fully combined.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Prepare the glaze by mixing the powdered sugar and milk until smooth.
- Allow the cake to cool slightly, then drizzle with the glaze before serving.
- Serve warm or at room temperature.
Notes
Use fresh sweet potatoes and bring eggs and butter to room temperature for best results.
