  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract and mashed sweet potatoes.
  4. In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  5. Gradually add the dry mixture to the sweet potato mixture, alternating with buttermilk until fully combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Prepare the glaze by mixing the powdered sugar and milk until smooth.
  9. Allow the cake to cool slightly, then drizzle with the glaze before serving.
  10. Serve warm or at room temperature.

Use fresh sweet potatoes and bring eggs and butter to room temperature for best results.
