Ingredients

  • Chicken breasts

  • Rice or quinoa (your choice)

Instructions

  1. Marinate the Chicken: Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and marinate in the fridge for at least 30 minutes.
  2. Cook the Chicken: Preheat the grill or stovetop pan. Remove the chicken from the marinade and grill for about 6-7 minutes per side or until the internal temperature reaches 165°F. Let rest before slicing.
  3. Make Tzatziki Sauce: In a bowl, mix yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice. Stir until combined and set aside.
  4. Prepare Rice or Quinoa: Cook according to the package instructions. Fluff with a fork when done.
  5. Assemble the Bowls: Start with a base of rice or quinoa in bowls. Top with sliced grilled chicken, chopped cucumbers, diced tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese.
  6. Add Tzatziki: Drizzle tzatziki sauce over the assembled bowls and enjoy!
