- 1 cup Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill or mint (optional)
- Olive oil, salt, and pepper to taste
Instructions
- Heat a skillet over medium heat and drizzle with olive oil. Season the chicken breast with salt and pepper, then cook until fully cooked, about 7-10 minutes each side. Once golden brown, slice into strips.
- To prepare the tzatziki sauce, in a bowl, combine Greek yogurt, minced garlic, lemon juice, diced cucumber, and dill or mint (if using). Stir until well blended.
- In a large bowl, layer the quinoa or rice with spinach or mixed greens. Top with cherry tomatoes, diced bell pepper, sliced red onion, and the sliced chicken.
