- 2 Chicken breasts
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 cloves Garlic, minced
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 Cucumber, diced
- 2 Tomatoes, diced
- 1 Red onion, diced
- 1 Bell pepper, diced
- 1/2 cup Feta cheese, crumbled
- 1 cup Greek yogurt
- 1 Cucumber, shredded
- 1 clove Garlic, minced for tzatziki
- 1 tsp Dill
- 2 tbsp Lemon juice for tzatziki
- 1 tsp Salt for tzatziki
Instructions
- Start by marinating the chicken. In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the chicken breasts and let them soak up those flavors for at least 30 minutes.
- Preheat your grill or skillet. Grill the marinated chicken until it’s cooked through, about 7–10 minutes per side, depending on thickness. Once done, remove from heat and slice it.
- To make the tzatziki sauce, mix Greek yogurt, shredded cucumber, minced garlic, dill, lemon juice, and salt in a bowl. Adjust seasoning to your taste.
- In serving bowls, layer cooked rice or quinoa first, then add the sliced chicken on top.
- Add a generous helping of chopped fresh vegetables—cucumber, tomatoes, red onion, and bell pepper—then sprinkle feta cheese over everything.
- Finish with a drizzle of the tzatziki sauce and enjoy!
Notes
Feel free to substitute chicken with turkey or use grilled halloumi or chickpeas for a vegetarian option. Marinating longer enhances the flavor.
