  • 2 Chicken breasts
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 Cucumber, diced
  • 2 Tomatoes, diced
  • 1 Red onion, diced
  • 1 Bell pepper, diced
  • 1/2 cup Feta cheese, crumbled
  • 1 cup Greek yogurt
  • 1 Cucumber, shredded
  • 1 clove Garlic, minced for tzatziki
  • 1 tsp Dill
  • 2 tbsp Lemon juice for tzatziki
  • 1 tsp Salt for tzatziki

Instructions

  1. Start by marinating the chicken. In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the chicken breasts and let them soak up those flavors for at least 30 minutes.
  2. Preheat your grill or skillet. Grill the marinated chicken until it’s cooked through, about 7–10 minutes per side, depending on thickness. Once done, remove from heat and slice it.
  3. To make the tzatziki sauce, mix Greek yogurt, shredded cucumber, minced garlic, dill, lemon juice, and salt in a bowl. Adjust seasoning to your taste.
  4. In serving bowls, layer cooked rice or quinoa first, then add the sliced chicken on top.
  5. Add a generous helping of chopped fresh vegetables—cucumber, tomatoes, red onion, and bell pepper—then sprinkle feta cheese over everything.
  6. Finish with a drizzle of the tzatziki sauce and enjoy!

Notes

Feel free to substitute chicken with turkey or use grilled halloumi or chickpeas for a vegetarian option. Marinating longer enhances the flavor.
