A delightful combination of grilled chicken, fresh veggies, and tzatziki, making it an ideal choice for lunch or dinner.

- 2 Chicken breasts
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 cloves Garlic, minced
- 1 tbsp Greek seasoning
- Salt, to taste
- Pepper, to taste
- 2 cups Cooked rice or quinoa (white or brown)
- 1 Cucumber, diced
- 2 Tomatoes, diced
- 1 Red onion, chopped
- 1 cup Feta cheese, crumbled
- Fresh parsley, for garnish
- 1 cup Tzatziki sauce (made with yogurt, grated cucumber, garlic, lemon juice, dill, and salt)
Instructions
- Marinate the chicken breasts in a mixture of olive oil, lemon juice, minced garlic, Greek seasoning, salt, and pepper. Let it rest for at least 30 minutes.
- Preheat the grill to medium heat. Grill the chicken breasts for about 6–7 minutes on each side, or until fully cooked.
- While the chicken is grilling, prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt in a bowl.
- Cook rice or quinoa as per package instructions.
- Chop the cucumber, tomatoes, and red onion.
- Once the chicken is done, let it rest for a few minutes before slicing it into strips.
- Assemble the bowls with cooked rice or quinoa, topped with vegetables, sliced chicken, crumbled feta cheese, tzatziki sauce, and fresh parsley. Serve immediately.
Notes
Feel free to substitute chicken with grilled tofu or chickpeas for a vegetarian option. Brown rice can be swapped for quinoa.
