- 1 bell pepper, chopped

- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Place the cooked quinoa or brown rice in a large bowl as the base.
- In a skillet, heat the olive oil over medium heat. Add the diced chicken and season it with garlic powder, onion powder, salt, and pepper. Cook until the chicken is thoroughly cooked, about 5-7 minutes.
- Assemble the bowls by layering the cooked chicken on top of the quinoa or rice. Add the halved cherry tomatoes, diced cucumber, chopped bell pepper, thinly sliced red onion, and avocado slices.
- For the tzatziki sauce, mix together Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a small bowl until well combined.
- Drizzle the tzatziki generously over the assembled bowls, and garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat chicken and grains separately for best results.
