- 2 cups cooked quinoa or brown rice
- 1 pound chicken breast, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1 cup kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 cups Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, olive oil, lemon juice, and salt and pepper in a bowl. Set aside.
- In serving bowls, layer a base of quinoa or brown rice.
- Top with grilled chicken slices, followed by cherry tomatoes, cucumber, bell pepper, and red onion.
- Sprinkle with feta cheese and kalamata olives.
- Drizzle tzatziki sauce over the top and garnish with parsley.
- Season with additional salt and pepper if needed.
- Serve immediately or store in containers for meal prep.
Notes
Store Greek Chicken Bowls in airtight containers in the fridge for up to 3-4 days. Keep tzatziki separate if possible. Feel free to substitute chicken for grilled shrimp or tofu.
