A vibrant Mediterranean-inspired dish featuring grilled chicken, fresh vegetables, and creamy tzatziki, perfect for family dinners or meal prep.


Ingredients

  • 2 cups cooked quinoa or brown rice
  • 1 pound chicken breast, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1 cup kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 cups Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, olive oil, lemon juice, and salt and pepper in a bowl. Set aside.
  2. In serving bowls, layer a base of quinoa or brown rice.
  3. Top with grilled chicken slices, followed by cherry tomatoes, cucumber, bell pepper, and red onion.
  4. Sprinkle with feta cheese and kalamata olives.
  5. Drizzle tzatziki sauce over the top and garnish with parsley.
  6. Season with additional salt and pepper if needed.
  7. Serve immediately or store in containers for meal prep.

Notes

Store Greek Chicken Bowls in airtight containers in the fridge for up to 3-4 days. Keep tzatziki separate if possible. Feel free to substitute chicken for grilled shrimp or tofu.
