- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- Fresh parsley, for garnish
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- Salt to taste
Instructions
- In a bowl, whisk together olive oil, oregano, garlic powder, salt, and pepper.
- Add chicken breasts to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes.
- Preheat grill to medium-high heat. Grill chicken for about 6-7 minutes on each side, or until fully cooked. Remove and let rest before slicing.
- In another bowl, combine Greek yogurt, drained grated cucumber, olive oil, lemon juice, minced garlic, and salt for tzatziki sauce. Mix well.
- To assemble, place cooked quinoa or rice in a bowl. Top with sliced chicken, cherry tomatoes, diced cucumber, red onion, and crumbled feta cheese.
- Drizzle with tzatziki sauce and garnish with fresh parsley. Serve immediately.
Notes
For a gluten-free option, use quinoa as the base. Leftovers can be refrigerated for up to three days.
