Description

Vibrant and nutritious Greek Chicken Bowls with grilled chicken, fresh vegetables, creamy feta, and tzatziki.


Ingredients

  • 2 cups cooked quinoa
  • 1 pound chicken breast, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 cup feta cheese, crumbled
  • 1 cup mixed greens
  • Salt and pepper to taste
  • 1/2 cup tzatziki sauce

Instructions

  1. Divide the cooked quinoa evenly into bowls as the base.
  2. Layer the grilled chicken slices on top of the quinoa.
  3. Add the halved cherry tomatoes, diced cucumber, thinly sliced red onion, diced bell pepper, and mixed greens.
  4. Sprinkle crumbled feta cheese over the top.
  5. Drizzle with tzatziki sauce and season with salt and pepper to taste.
  6. Enjoy immediately or transfer to meal prep containers for later.

Notes

For extra flavor, marinate chicken in olive oil, lemon juice, and herbs. You can substitute brown rice or couscous for quinoa and feel free to mix up the veggies.
