Ingredients

- 2 cups cooked quinoa or brown rice
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, diced
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- Fresh parsley for garnish
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Preheat your grill or grill pan over medium-high heat.
- In a small bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Brush this mixture over the chicken breasts.
- Grill the chicken for 6-7 minutes on each side or until fully cooked. Once done, remove from the grill and let it rest before slicing.
- In a serving bowl, layer the cooked quinoa or brown rice as your base.
- Top this with sliced grilled chicken, cherry tomatoes, diced cucumber, red onion, bell pepper, and crumbled feta cheese.
- For the tzatziki sauce, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt in a bowl, mixing well.
- Serve your Greek chicken bowls topped with a generous dollop of tzatziki sauce and garnish with fresh parsley if desired.
