			- 2 cups Shredded Chicken (rotisserie chicken works great)
 - 1 cup Salsa Verde (choose mild or spicy based on your preference)
 - 1 cup Cheese (Monterey Jack and Cheddar blend)
 - 4 Flour Tortillas (8-inch for easy handling)
 - 1 tablespoon Oil or Butter (for grilling)
 
Instructions
- Heat a skillet over medium heat, adding a splash of oil or a pat of butter.
 - Once hot, lay down a tortilla, then pile on the shredded chicken and a generous amount of salsa verde.
 - Sprinkle cheese over the toppings, then cap it with another tortilla.
 - Cook for about 3-4 minutes until the bottom is golden brown and the cheese starts to melt.
 - Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden.
 - Remove from the skillet, cut into wedges, and serve warm.
 
Notes
For additional flavor, consider adding sautéed bell peppers or onions, and serving with fresh guacamole.
