Ingredients

  • 2 cups Shredded Chicken (rotisserie chicken works great)
  • 1 cup Salsa Verde (choose mild or spicy based on your preference)
  • 1 cup Cheese (Monterey Jack and Cheddar blend)
  • 4 Flour Tortillas (8-inch for easy handling)
  • 1 tablespoon Oil or Butter (for grilling)

Instructions

  1. Heat a skillet over medium heat, adding a splash of oil or a pat of butter.
  2. Once hot, lay down a tortilla, then pile on the shredded chicken and a generous amount of salsa verde.
  3. Sprinkle cheese over the toppings, then cap it with another tortilla.
  4. Cook for about 3-4 minutes until the bottom is golden brown and the cheese starts to melt.
  5. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden.
  6. Remove from the skillet, cut into wedges, and serve warm.
