Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked white rice
- 1/2 cup sour cream
- 1/2 cup nacho cheese sauce
- 1/4 cup chipotle sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella
- 4 large flour tortillas
- Butter or oil for grilling
Instructions
- In a skillet over medium heat, brown the ground beef for about 8-10 minutes, breaking it apart with a spatula. Drain excess grease. Stir in taco seasoning and 1/4 cup of water; simmer for 5 minutes.
- Warm the tortillas in a dry skillet or microwave.
- Lay a warm tortilla flat; layer with cooked rice, seasoned beef, nacho cheese sauce, chipotle sauce, sour cream, and top with shredded cheddar and mozzarella.
- In a clean skillet, melt 2 tablespoons of shredded cheese over medium heat. Place the burrito seam-side down on the cheese and grill for 3-4 minutes until the cheese crust forms. Flip and grill the other side until crispy.
Notes
Serve warm with a side salad, guacamole, tortilla chips, salsa, and extra sour cream or cilantro.
