Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked white rice
- 1/2 cup sour cream
- 1/2 cup nacho cheese sauce
- 1/4 cup chipotle sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella
- 4 large flour tortillas
- Butter or oil for grilling
Instructions
- In a skillet over medium heat, brown the ground beef for 8-10 minutes. Drain any excess grease, stir in the taco seasoning with 1/4 cup of water, and simmer for 5 minutes.
- Heat the tortillas briefly on a dry skillet or in the microwave.
- Lay each tortilla flat and layer with cooked rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, and both shredded cheeses.
- In a clean skillet, sprinkle 2 tablespoons of shredded cheese, place the burrito seam-side down, and cook until the cheese melts and creates a crispy crust. Flip and repeat with the other side, cooking for 3-4 minutes.
Notes
For extra crispiness, brush the outside with butter before grilling. Feel free to customize with different meats or veggies.
