- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked white rice
- 1/2 cup sour cream
- 1/2 cup nacho cheese sauce
- 1/4 cup chipotle sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella
- 4 large flour tortillas
- Butter or oil for grilling
Instructions
- Cook the beef: In a large skillet, brown the ground beef over medium heat for 8–10 minutes. Drain any excess grease and add in the taco seasoning and 1/4 cup of water. Let it simmer for another 5 minutes until well combined.
- Warm the tortillas: To make them pliable, warm your tortillas in a dry skillet for a few seconds or pop them in the microwave for about 30 seconds.
- Assemble the burrito: Lay each tortilla flat and start layering with cooked rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, and shredded cheddar and mozzarella.
- Grill the burrito: Heat a clean skillet over medium heat and sprinkle 2 tablespoons of shredded cheese directly into the pan. Place the burrito seam-side down and grill for 3–4 minutes until the cheese melts. Flip and repeat on the other side.
Notes
For a vegetarian option, swap ground beef for black beans. Feel free to experiment with the choice of cheese.
