- 4 medium russet potatoes, peeled and diced

- 1 cup shredded cheddar cheese, divided
- 1 cup sour cream
- 1/2 cup beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and dice the russet potatoes into small, even cubes.
- In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion becomes fragrant and translucent.
- Add the ground beef to the skillet. Season with salt, pepper, thyme, and paprika. Cook until the beef is browned and fully cooked, breaking it up as needed.
- Pour in the beef broth, stirring well. Let it simmer for a few minutes to meld the flavors together. Remove the skillet from heat.
- In a large mixing bowl, combine the diced potatoes with the beef mixture. Fold in the sour cream and half of the shredded cheddar cheese until everything is well coated.
- Transfer the combined mixture into a baking dish and spread it out evenly. Top with the remaining cheddar cheese.
- Cover the dish tightly with foil and bake for 30 minutes.
- After 30 minutes, remove the foil and continue baking for an additional 10 to 15 minutes until the cheese is melted and bubbling.
- Allow the casserole to rest for 10 minutes before serving for the best texture.
