  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and dice the russet potatoes into small, even cubes.
  3. In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion becomes fragrant and translucent.
  4. Add the ground beef to the skillet. Season with salt, pepper, thyme, and paprika. Cook until the beef is browned and fully cooked, breaking it up as needed.
  5. Pour in the beef broth, stirring well. Let it simmer for a few minutes to meld the flavors together. Remove the skillet from heat.
  6. In a large mixing bowl, combine the diced potatoes with the beef mixture. Fold in the sour cream and half of the shredded cheddar cheese until everything is well coated.
  7. Transfer the combined mixture into a baking dish and spread it out evenly. Top with the remaining cheddar cheese.
  8. Cover the dish tightly with foil and bake for 30 minutes.
  9. After 30 minutes, remove the foil and continue baking for an additional 10 to 15 minutes until the cheese is melted and bubbling.
  10. Allow the casserole to rest for 10 minutes before serving for the best texture.
