Description

Ingredients

  • 1 pound ground beef
  • 1 cup orzo pasta
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Parmesan cheese, grated

Instructions

  1. In a large pan, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until translucent, about 3-5 minutes.
  2. Add ground beef to the pan; cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in orzo, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, until orzo is cooked and liquid is mostly absorbed, stirring occasionally.
  5. Top with grated Parmesan cheese before serving hot.

Notes

For a leaner option, substitute ground turkey or chicken. For a vegetarian version, use vegetable broth and omit the meat.
