- 1 pound ground beef
- 1 cup orzo pasta
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- Parmesan cheese, grated
Instructions
- In a large pan, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until translucent, about 3-5 minutes.
- Add ground beef to the pan; cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Stir in orzo, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, until orzo is cooked and liquid is mostly absorbed, stirring occasionally.
- Top with grated Parmesan cheese before serving hot.
Notes
For a leaner option, substitute ground turkey or chicken. For a vegetarian version, use vegetable broth and omit the meat.
