- 1 pound ground turkey
- 2 bell peppers (any color, sliced)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Cooked rice or lettuce wraps for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion turns translucent, about 3-4 minutes.
- Toss in the ground turkey, breaking it apart as it cooks. Brown until no longer pink.
- Stir in the sliced bell peppers, chili powder, cumin, salt, and pepper.
- Cook everything together until the peppers are tender, about 5-7 minutes.
- Serve over cooked rice, in lettuce wraps, or use it as a filling for tacos.
Notes
Consider topping with diced avocado, fresh cilantro, or a squeeze of lime for added flavor. Leftovers can be stored in an airtight container for up to three days, or frozen for longer storage.
