- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 pound ground turkey
- 1.5 tablespoons ground cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup onion, diced
- 1 yellow bell pepper, diced
- 3 small or 2 large sweet potatoes, peeled and diced (about 3 cups)
- ½ cup water
- ½ cup mozzarella, shredded
- ¼ cup fresh cilantro, chopped
Instructions
- In a large skillet over medium heat, add the olive oil.
- Add minced garlic and diced onion, cooking until fragrant and translucent.
- Push the veggies to one side, then add the ground turkey, cooking until browned.
- Stir in cumin, chili powder, salt, and pepper, ensuring everything is well-coated with spices.
- Toss in the diced sweet potatoes and bell pepper. Mix everything well.
- Pour in the water and cover. Let it steam for about 10-15 minutes, or until potatoes are tender.
- Uncover and sprinkle mozzarella on top. Cover for another 2-3 minutes, until melted.
- Remove from heat and sprinkle cilantro on top before serving.
