  • 1 tablespoon garlic, minced
  • 1 pound ground turkey
  • 1.5 tablespoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup onion, diced
  • 1 yellow bell pepper, diced
  • 3 small or 2 large sweet potatoes, peeled and diced (about 3 cups)
  • ½ cup water
  • ½ cup mozzarella, shredded
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a large skillet over medium heat, add the olive oil.
  2. Add minced garlic and diced onion, cooking until fragrant and translucent.
  3. Push the veggies to one side, then add the ground turkey, cooking until browned.
  4. Stir in cumin, chili powder, salt, and pepper, ensuring everything is well-coated with spices.
  5. Toss in the diced sweet potatoes and bell pepper. Mix everything well.
  6. Pour in the water and cover. Let it steam for about 10-15 minutes, or until potatoes are tender.
  7. Uncover and sprinkle mozzarella on top. Cover for another 2-3 minutes, until melted.
  8. Remove from heat and sprinkle cilantro on top before serving.
