A heartwarming and flavorful stew blending tender beef chuck and rich Guinness stout, perfect for chilly evenings.

- 2 lbs beef chuck, cut into cubes
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups Guinness stout
- 2 cups beef broth
- 4 large carrots, cut into chunks
- 3 large potatoes, peeled and cut into chunks
- 2 stalks celery, chopped
- 1 tablespoon tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon thyme
- 1 bay leaf
- Salt and black pepper, to taste
Instructions
- Sear the beef: Heat the vegetable oil in a large pot over medium heat. Brown the beef cubes in batches to ensure a good sear. Once browned, set them aside.
- Sauté vegetables: In the same pot, add onions and garlic. Sauté until softened and fragrant.
- Combine ingredients: Return the beef to the pot. Stir in the tomato paste and cook for a minute to enhance the flavor.
- Add liquid: Pour in the Guinness stout and beef broth. Add Worcestershire sauce, thyme, and the bay leaf. Bring the mixture to a boil.
- Simmer: Reduce the heat to low, cover, and let it simmer for about 90 minutes or until the beef is tender.
- Incorporate veggies: Add the carrots, potatoes, and celery. Continue to simmer uncovered for another 30 minutes or until the vegetables are tender.
- Season: Before serving, season with salt and black pepper to taste. Don’t forget to remove the bay leaf!
Notes
For a thicker stew, mix a tablespoon of cornstarch with a little water to create a slurry and add it during the last 10 minutes.
