A guilt-free version of classic churros that are baked, not fried, making them a delightful treat for all ages.

- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1/4 cup coconut sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsweetened applesauce
- 1/2 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tbsp melted coconut oil
- Cinnamon sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the whole wheat flour, almond flour, coconut sugar, baking powder, and salt, stirring until mixed well.
- In another bowl, whisk together the applesauce, almond milk, vanilla extract, and melted coconut oil until well mixed.
- Gradually pour the wet ingredients into the dry ingredients, mixing until just combined—don’t overmix!
- Using a small cookie scoop, drop the batter onto the prepared baking sheet, spacing them evenly apart.
- Bake for about 15-20 minutes, or until the churro bites are golden and cooked through.
- Allow to cool slightly before rolling each bite in cinnamon sugar for an irresistible finish!
Notes
For a nut-free version, swap almond flour for oat flour, and replace coconut sugar with brown sugar for a different flavor profile. Don’t over-bake to ensure they stay soft.
