Instructions

  1. Preheat your oven to 350°F (175°C). Generously grease a mini muffin pan.
  2. In a large bowl, mix the smashed bananas, oats, and vanilla extract until well combined.
  3. If you have mix-ins like chocolate chips or nuts, fold them into the banana-oat mixture.
  4. Spoon the batter into the muffin pan, filling each cup close to the top.
  5. Bake for 15-18 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  6. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.

Notes
