- 4 large ripe bananas (smashed)
- 3 cups oats
- 1 tsp vanilla extract
- Mix-ins of your choice (nuts, chocolate chips, dried fruit, etc.)
Instructions
- Preheat your oven to 350°F (175°C). Generously grease a mini muffin pan.
- In a large bowl, mix the smashed bananas, oats, and vanilla extract until well combined.
- If you have mix-ins like chocolate chips or nuts, fold them into the banana-oat mixture.
- Spoon the batter into the muffin pan, filling each cup close to the top.
- Bake for 15-18 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
Notes
For softer muffins, ensure your bananas are super ripe. Consider adding a pinch of cinnamon or nutmeg for an enhanced flavor.
