Description

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or currants (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, grated carrots, applesauce, honey (or maple syrup), cinnamon, nutmeg, baking powder, and salt. Mix until everything is well incorporated.
  3. If using nuts or dried fruit, fold them into the mixture now.
  4. Scoop tablespoons of the mixture onto your prepared baking sheet, spacing them slightly apart.
  5. Bake for 12 to 15 minutes or until the cookies are golden brown.
  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
