- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or currants (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, grated carrots, applesauce, honey (or maple syrup), cinnamon, nutmeg, baking powder, and salt. Mix until everything is well incorporated.
- If using nuts or dried fruit, fold them into the mixture now.
- Scoop tablespoons of the mixture onto your prepared baking sheet, spacing them slightly apart.
- Bake for 12 to 15 minutes or until the cookies are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
