- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mix together the shredded chicken, black beans, corn, diced tomatoes, rice, half of the shredded cheese, taco seasoning, olive oil, salt, and pepper.
- Ensure everything is well combined.
- Pour the mixture into a greased baking dish and spread it out evenly.
- Sprinkle the remaining cheese on top.
- Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Allow it to cool for a few minutes before serving. Garnish with fresh cilantro, if desired.
Notes
Feel free to swap chicken for ground turkey or a meat alternative. You can serve with a salad, avocado slices, or set up a topping bar.
