Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mix together the shredded chicken, black beans, corn, diced tomatoes, rice, half of the shredded cheese, taco seasoning, olive oil, salt, and pepper.
  3. Ensure everything is well combined.
  4. Pour the mixture into a greased baking dish and spread it out evenly.
  5. Sprinkle the remaining cheese on top.
  6. Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Allow it to cool for a few minutes before serving. Garnish with fresh cilantro, if desired.
